Buzzword Probiotics

You have probably heard the word "probiotics" a few times lately. It is showing up on quite a few yogurt containers these days. Actually, probiotics are live microorganisms that make sweet milk into sour milk. If consumed in sufficient quantities these microorganisms also called bacteria have a health benefit for the consumer. When these bacteria are used to make commercial yogurt they have been of little use to the eaters of yogurt because they were killed off with pasteurization. Now, when we see the probiotics mentioned on yogurt containers, I am told, they are added after the yogurt was pasteurized so some live bacteria are there for you.

What is so good about probiotics? As you probably surmised from my previous article, I grew up with unpasteurized milk. Except for the usual childhood diseases like measles, scarlet fever, mumps, chicken pox, whooping cough, etc. usually picked up in school, none of us hardly ever had the sniffles and definitely never any flu. We drank milk unpasturized and soured, or as buttermilk, also from home-made unpasteurized soured cream after making butter.

During a transition period when my Dad sold the farm and my parents went to Canada to see what they could buy, we kids lived with our retired grandparents who had moved near a village, on a hill just above the train station. Those two years we all gained weight and were often sick.

Our diet was still more war-time oriented devoid of much protein and lots of cream soups, sweets on weekends, things one could not afford during the war, but were not as expensive as meat. But the worst was the pollution from the coal-fired locomotives. I got bronchitis and could not shake it.

After we came to Canada we all became healthy again. We lived on lots of vegetables, fruit, some meat, potatoes, heavy, home-made, black, whole rye bread, good real butter, and lots of meals of whole milk allowed to go sour, cooled beaten to a froth and served with a bit of sugar, cinamon, and black bread crumpled into it. None of us were ever sick. None of us got the flu. The only thing I experienced, was the problem with the polio vaccination I spoke about earlier.

I do believe that much of our good health was due to probiotics. There are several bacteria used in making yogurt to give it its specific flavour. We only had what came naturally in milk: lactobacillus acidophilos. I still buy acidophilus, "yogurt" capsules, in the healthfood store... out of a fridge only. They are much stronger than the stuff you get off the store shelf.

Scientists agree that probiotic bacteria do many important things. While enzymes in your digestive tract and in food, FRESH FOOD, NOT COOKED, digest the food you eat, probiotics break down what's left with enzymes they create into its most basic elements. This allows all nutrients to be properly absorbed through the walls of the digestive system increasing nutritional availability for rapid growth and development of cells. They particularly enhance the availability of the B vitamins, all 11 of them, Vitamin K, fatty acids and calcium. They also assist in the production of lactase, a digestive enzyme made by the cells of the small intestine.

As a by-product of their own metabolism, probiotic bacteria make lactoferrin. This is an iron-binding protein essential to retrieving iron fron the food we eat. Increased lactoferrin can help relieve iron-assimilation deficiencies.

Probiotic bacteria latch on to everything in your intestines and thus also loosen any hard feces stuck to the intestinal walls, allowing this waste to flush naturally. Probiotics will help overcome your constipation and your diarrhea. In a way they strengthen your immune system as they are another line of defense against any bugs entering the digestive tract.

When my youngest son was just a little tyke he got the 24 hour stomach flu but could not get over it. Since we had no way of getting unpasteurized milk at that point, I had to see what else I could do. In the healthfood store I was led to the fridge and shown the lactobacillus acidophilus capsules which cause milk to go sour. I gave my son several throughout that day and from the next day he was as good as new.

Probiotics work together with the cells of your body to metabolize proteins and eliminate toxic waste. They help to kill viruses and parasites. Judicious use has also caused people to have lowered colesterol levels.

Some allergies are caused by food molecules that are not properly digested, and by molecules of items that should not be in your stomach entering the blood stream. Probiotics prevent that by ferreting out those items that are indigestible and transporting it as waste out of the body. This housecleaning has also proved to alleviate chronic fatigue syndrome, skin problems, and systemic candida. Often yeast and fungal infections can be prevented or eliminated with probiotic bacteria.

Probiotics further affect your immune system because they produce specific proteins that act as antigens which your body's immune system can then use to battle all kinds of disease. In your intestines they produce a slightly acidic environment on the intestinal walls slowing the growth of disease-causing bacteria. Probiotic bacteria also stimulate the production of B-Lymphocytes and related large numbers of extra anti-bodies to protect and defend against infections. By stimmulating the body's production of alpha-interferon, probiotic bacteria affect the immune response of your body.

Just think, with all that colon cleaning it will stop bad breath and body odour. When the intestines are clogged much of your detoxing happens through the lungs and skin. You can fix that.
